Pumpkin Mousse





Pumpkin is one of my all-time favorite flavors. It always reminds me a fall and family. It wouldn't hardly be thanksgiving without pumpkin pie, but with all the fat and calories of a pie, it would not be good. I HAVE A HEALTHY SOLUTION! Pumpkin Mousse… It is an amazing and light dessert that is great on its own or used as a dip for fruit. It is also really good if you buy the frozen phillo cups they sell in most supermarkets and cook the cups in the oven till golden brown and then just put some of the mixture in there. Instant low sugar mini pumpkin pies. YUM!

On a side note there is less than 4 grams of sugar in the entire recipe and it all comes from the pumpkin. It is also a really good dessert for those of you still in the pureed food stage post-surgery. You could also always add a little protein powder to this to get your protein needs met. ENJOY!

Ingredients:

Cooking spray

2          16 oz. Container Sugar Free Whipped Topping

2          15 oz. Cans of Pumpkin puree

2          5 oz. Packages Sugar Free/ Fat Free Vanilla Pudding Mix

3 tsp.   Pumpkin Pie Spice


1. Mix together pumpkin, pie spice, and pudding mix until blended.


2. Fold in whipped topping and chill in the refrigerator for half an hour.
