Friday Food Fix - Green Chili Eggs


      
         

My dad’s side of the family is from New Mexico and this is where I learned this fun four ingredient breakfast egg recipe. This is one of my “go to” comfort breakfasts. The nice thing is you can make it for 1 or 100. It is very easy to scale this recipe for any size group. Down in the southwest they put green chilies on everything, even on hamburgers. I have come to love the chilies on everything. It is a great source of protein and can be made in less than 5 min. so no excuses from you “I don’t have time to cook breakfast” people. It takes you 5 min. just to stop for your morning coffee or go through a drive thru. NO EXCUSES! Just good food!

Serves: 1                                                                         Calories: 200 per serving

1             Large Egg
1tbsp.    Canned Green Chilies
1tbsp.    Crumbled Cotija Cheese (You can use another kind of Mexican cheese if you want)
1tsp.      Olive Oil
Salt and Pepper to taste

1. Preheat pan over medium heat
2. Crack egg and whisk adding salt and pepper to season  
3. Put 1 tsp. olive oil in pan and add green chilies. Then add egg and move around pan until cooked.

4. Crumble cheese on top right before serving.
