Friday Food Fix - Lentil Soup






Nights are getting colder as winter is approaching so warm up with one of my favorite, go to, budget recipes. With over 22 g of protein in a serving, this is an amazing way to each cheap. This entire recipe can be made for about $1.00 a serving. Pair this with a salad for an amazing and healthy home cooked meal.  



Servings:      8                                                                           Calories: 245


1lb bag            Dried Lentils
2qt                   Chicken Stock (vegetable stock can be used for a vegetarian option)
2 tbsp.             Olive Oil
1                      Medium Onion (diced)
4                      Garlic Cloves (chopped)
1 cup               Carrot (sliced)
1 cup               celery (sliced)
2 cups              Fresh chopped Parsley
1                      16 oz can Diced Tomato
½ tbsp.             Chili Powder
1 tbsp.             Cumin
1 tbsp.             Dried Thyme (can use 2 tbsp. fresh - remove stocks)
Salt and Pepper to taste

1. Soak lentils in hot water for 15 min.
2. Place oil in a stock pot heated over medium high heat. Add onions and cook until just starting to brown. (about 5 min) Then add garlic and cook an addition 2 minutes.
3. Add carrot and celery and cook for an additional 2 minutes. Then add tomato and seasonings.
4. Cook on medium low for 30 to 35 minutes or until the lentils are tender.
5. Stir in parsley and serve!
